English: Healthy thursday! This week you get a recipe for banana and oatmeal pancakes. Most of the time here in Vietnam we have had eggs and fresh fruit for breakfast and in the long run it become a little boring. So when we found some oatmeal in the supermarket it was time to do some experiments. Doing the last couple for weeks we have had these really tasty and healthy pancakes a couple of times, and i love them more and more. We serve them with a little bit of raspberry jam and fresh fruit. 2-3 pancakes if enough for one person.
What you need for 6 small pancakes: 1 big banana, 2 eggs, 1 tablespoons sugar substitute, 2 cups of oatmeal.
How to: You start to bog the banana with a fork into a bowl. Then turn two whole eggs into the bowl and whip it to bind roughly together. Then put the sugar substitute in the bowl and gradually add your oatmeal while you mix the ingredients together.
Take a pan and put it on low heat. Add some butter and then you are ready to make the actually pancakes. Take a small amount of the dough into the pan an flatten the mass with your fork. The pancakes should approximately have 3 minutes on each side. Make sure that they do not get too much, so they become dry. When the pancakes are ready, your are ready to serve. :)
